There is no better way than to fuel the mind with a tasty and nutritious breakfast. The first thing I do when I wake up in the morning is start off writing in my Morning Sidekick Journal and guided meditations. Soon after, I find myself wanting to throw myself downstairs and scavenge the cupboards for something to eat. My lifestyle has been accommodated to exploring mouth-watering varieties without experiencing tasteless boredom.
On my hunt to make a nutritious and filling meal I keep in mind that whatever I whip up will need to be filling enough to last me up until my lunch hour. I have spent countless months and even years experimenting with different variations of slow-digesting carbs that are gluten-free. I finally found what I’ve been looking for 😊
After a long run in with the health police I found myself nearly resistant to almost everything. Eventually my diet was spread so thin I had a whole 5-food items that I could eat, and nothing else. Oatmeal made me bloat, rice had me gassy, potatoes gave me acne, beans & legumes had me feeling 5 months pregnant, fruits of all sorts (don’t even get me started), vegetables ( my safe place)..until those started to work against me in my favor, meat (no way – too much protein), so then what could I eat?!? Or should I say, drink.
No longer was this a question, but it was a lifestyle. The grocery store was so simple, I planned everything I needed for my meal preps and anything outside of that was non-existent. Only one thing is concerning with a diet this restrictive and that is the possibility for a nutrient deficiency – which is what happens when the body is lacking essential vitamins and/or minerals to function at an optimal level.
*** Several chronic illnesses such as autoimmune disease, heart disease, cancer, and some other inflammatory conditions. A diet this restrictive should only be temporary and not recommended unless monitored by a physician. If this sounds like you – this delicious gluten-free, nut-free, low-carb and low-sugar granola breakfast is perfect for you! Not only is this a delightful morning treat, but it is extremely nutrient dense and has a plethora of health benefits. This home-made nut-free and gluten-free, breakfast granola pairs perfectly with a grain-free cereal and your choice of a probiotic filled yogurt.
I have been able to slowly reintroduce some of my favorite foods. It can be time consuming and does allow for planning and preparation, but on the upside to making my own food means that I eat with comfort and am in full control of every ingredient that touches my palette.
