It always happens – every time we buy carrots as a healthy alternative we blink once and were thinking of what to make them with, then blink again and they are getting thrown away a week later because they spoiled. With all good intentions, this simply is just not making the cut – whether they are chopped, cooked, shredded, sliced, baked, or steamed (that is pretty ‘pun’ny) 😉.
Oh, how nice it would be to use what nature gave us instead of throwing it away.

We like to fill that pesky sweet tooth of ours, which means that we are going to have to spice up those carrots in my favorite Carrot Cake Oatmeal cookies so that we do not get bored!
